Crack Slaw – A Healthy, Low Carb, High Protein Dish

I try to eat as healthy as possible; I stive for high protein low carb options. A few years ago I was at a party where “Crack Slaw” was being served. I was instantly hooked!

What is “Crack Slaw”? Basically its an eggroll without the fried outside. The wonderful part is you can modify the recipe to your taste preferences and change it up.

Crack Slaw Recipe

Ingredients:

  • 1 lb Lean Ground Turkey
  • 3 Green Onions (Sliced)
  • 1/2 Yellow Onion
  • 14 oz Coleslaw Mix (Shredded Cabbage)
  • 2 Garlic Cloves (Minced)
  • 1/2 tsp Ginger Paste
  • 2 tbsp Sesame Oil (Toasted)
  • 1/4 tsp White Sugar (or 1 Splenda pkg)
  • 1/4 cup Chicken Broth
  • 1 tsp White Vinegar
  • 2 tbsp Soy Sauce
  • 1/2 tsp Hot Sauce (Siracha)
  • Salt & Pepper (to taste)

Directions:

  1. Brown ground turkey in a skillet and season it with salt and pepper to taste.
  2. Remove ground turkey from the pan; drain off fat and set aside.
  3. Heat sesame oil and sauté in garlic, onions and cabbage until cooked to the desired tenderness.
  4. Stir in sauces/liquids.
  5. Add ground turkey back in and mix well.
